Peanut Butter Pumpkin Cacao Waffle Recipe

Prepare your taste buds for some DELICIOUS waffles. I was honestly surprised at how well these turned out because sometimes adding protein to waffles can make them taste kinda funky (well at least in my opinion). I'm pretty picky and these passed the test with flying colors. I'm a sucker for anything pumpkin, chocolate, or peanut butter though so I might be bias! Oh well, at least I'm honest. These are full of all the carbs and protein to fuel those muscles and give yah tons of energy to take on the day.

Whatcha need:
1/2 serving of waffle mix (I used the Enjoy Life Pancake + Waffle Mix which is milk, nut, soy, and gluten free)
About two spoonfuls of organic pure pumpkin
Small spoonful of cacao powder
One serving of egg whites (3 tablespoons) or one whole egg
1/2 scoop of PEScience peanut butter cookie protein powder (any protein should suffice though)
Cashew milk or water (add sparingly until you reach a smooth batter like consistency)
Dash of baking powder
1/2 Stevia packet
Here's how to make these bad boys:
Throw all of the ingredients above into a bowl and mix until you get a smooth batter-like consistency. Spray your waffle iron with cooking spray (I prefer coconut oil) and pour the mix over the iron. Put as much or as little as you want based on how small/large you want your waffles to be. I tend to make lots of smaller ones, just a personal preference I guess. When you have finished cooking your waffles, throw them on a plate and load up on all da' toppings. I usually add some fruit, maple syrup, and chocolate syrup. Add whatever your taste buds desire!!
