Healthy, Simple, & Delicious Dinner Your Entire Family Will Love, Say What???

Hello Friends!
Do you ever find it hard to create a well balanced and nutritious meal your family will enjoy? Maybe it's because you feel healthy food is too expensive? Maybe it's because you think eating healthy has to be complicated? Whatever the reason may be, I'm here to help you and save you/your wallet with this meal idea!
Eating well does not have to be complicated or expensive. I firmly believe that investing in your health is extremely important. However, I'll save that for a later blog post. The meal I'm about to show you is super versatile and flexible. You can add or take away ingredients based off of likes/dislikes in your fam. It is perfect for individual enjoyment, dinner for the whole fam, or even meal prep for the week. The meal makes for some tasty leftovers too!
OKAY lets talk food deets!!!
I know that's what you're all waiting for...
Ingredient List:
-2 Medium/Large Zucchinis
-2 Medium/Large Yellow Squash
-3/4 Bag of Snow Peas
- 1/2 Bag of Shredded Tri-Color Carrots
-3/4 Container of Cherry Tomatoes
-1/2 Can of Chickpeas
-1 Egg
-Chicken Breast Strips
-Balsamic Vinegar
-Lime Juice
-Pink Salt
-Basil
Deets:
First, wash and cut all of your veggies. After you’ve finished cutting, be sure to dry your veggies with some sort of cloth/paper towels to rid of any excess water they may be holding onto. Spray a large skillet with cooking spray and turn on medium/low heat. Let the pan warm up a little and then add your vegetables to the pan.
Second, add basil, balsamic, lime juice, and pink salt to the mix. Let them sauté covered for about fifteen minutes (or until they're to your liking). Check frequently to stir.
Next, in a separate pan, apply cooking spray and turn on medium heat. Let the pan sit for a second to heat up. Once the pan is heated, add thin chicken breast, chickpeas, and balsamic. Allow them to cook (follow instructions on packaging). Once the two have almost finished cooking, crack an egg over the top and stir into the chicken/chickpeas and mix in until fully cooked.
Place a strainer in the sink and pour the veggies into it. Allow the water to seep out of the veggies (zucchini & squash tend to get really watery when cooked) so the stir fry isn't too watery. Transfer the veggies into a large bowl to serve. Add some honey mustard to the mix and stir to taste.
Take your chickpea, chicken, and egg mix off of the stove and transfer into the large bowl of veggies to serve as well.
Thats it, SO simple friends!!!! Throw some balsamic, lime, and salt on the table for your fam to add to their individual bowls if they want some more flavor or extra taste.
This meal took me all of thirty minutes to prepare and throw together for my family. Thirty minutes, that's it!!!!!! My mom, dad, and grandma loved it and couldn't believe how little time it took to put together. Wallet friendly, healthy, and your taste buds will love it. Don't overcomplicate things. Eating healthy doesn't have to be expensive or time consuming.
